Amarone della Valpolicella D.O.C. Classico
A sophisticated process that begins with a wine and scraping of the grapes, followed by a controlled-temperature fermentation monitored for 20 days, in large barrels. Replacements frequent and periodic delestages during the first phase of fermentation, alongside manual punching exhaustion of sugars.
Aging in wood: 36 months - Bottle aging: 12 months
It is an exceptional wine delicacy when paired with delicately cooked meat or game dishes. Wonderful companion for seasoned cheese and lightly grease as the Monte Veronese or Grana Padano.
